Vegan No-Bake Cookie Dough Moons

  • 1 cup almond flour (ground almonds)
  • 6 tsp birch sugar
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 4 tsp melted coconut oil
  • 1/4 cup chopped dark chocolate (dairyfree)


  • In a bowl, mix the almond flour, birch sugar, vanilla, and salt.
  • Melt the coconut oil and work it into the cookie dough. You should get a sticky but workable dough here.
  • Chop the chocolate and mix the chocolate chunks into the dough.
  • Press the dough into your favorite silicone mold and let it chill ion the fridge for 10 minutes.
