Peel the sweet potato. Slice large strips of the potato using a peeler.
Add the salt to a pot of boiling water. Boil the strips in hot water for 2-3 minutes.
Drain the strips and put aside.
Whisk together the marinade: olive oil, vinegar, liquid smoke, seaweed. Chop 2-3 dill stems and add to the marinade. Fill it into an airtight container.
Add the sweet potato slices and leave in the marinade overnight, better even for 2 nights.
