No-Bake Vegan Raspberry Bars

Ingredients

Raspberry Bar

  • 1 cup oatmeal
  • 1 cup amaranth meal
  • 4 tsp raspberry power
  • 4 tbsp agave syrup
  • 1 tsp vanilla essence
  • 3 tbsp coconut milk

Raspberry chocolate coating

  • 120 g cocoa butter melted
  • 2 tsp raspberry powder
  • 2 tbsp maple syrup

Instructions

Raspberry Bar

  • Mix the dry ingredients in a clean bowl: oatmeal, amaranth meal and raspberry powder.
  • Do the same for the liquid ingredients.
  • Mix everything together and use your hands to create a firm dough.
  • Transfer the dough to the fridge for half an hour to rest. Take it out and form bars of desired size. Pop them into the freezer for at least 2 hours.

Raspberry chocolate coating

  • Prepare the chocolate coating by melting the cocoa butter in a double boiler.
  • Add the raspberry powder and agave syrup and stir well.
  • Dip bars into chocolate several times. The bars will be quite cold coming straight out of the freezer so you can create quite a thick coating by dipping the bars a couple of times.
  • Decorate with cocoa nibs, coconut slices or nuts.
