In a bowl mix the dry ingredients: popped quinoa/rice, chopped dates, linseed, mulberries, cashews, salt and vanilla.
In a saucepan melt the peanut butter, cacao butter and maple on a slow heat.
Add the mixture to the bowl of dry ingredients and mix well.
Line a tray wioth parchment paper and spread the mixture evenly onto the tray using a spatula.
Leave this in the fridge to set for at least an hour.
In the meantime: melt the vegan chocolate, take out your granola bar tray and drizzle generously with your melted chocolate.
Add all the remaining toppings! Let set in the fridge for another 30 minutes!
