Deluxe Chocolate Granola Bars

Deluxe Chocolate Granola Bars

  • 125 g popped quinoa/rice pops or mixed
  • 15 chopped dates
  • 1 cup ground linseed
  • 1 cup mulberries
  • 2 cups cashews
  • 1/2 tsp salt
  • 1 tsp ground vanilla
  • 3/4 cup maple syrup
  • 2 cups peanut butter
  • 1/2 cup cacao butter


  • 200 g vegan chocolate melted
  • 1 handful cacao nibs
  • 3 tbsp dried flowers
  • 1/2 cup chopped roasted hazelnuts
  • 4 tbsp almond butter


  • In a bowl mix the dry ingredients: popped quinoa/rice, chopped dates, linseed, mulberries, cashews, salt and vanilla.
  • In a saucepan melt the peanut butter, cacao butter and maple on a slow heat.
  • Add the mixture to the bowl of dry ingredients and mix well.
  • Line a tray wioth parchment paper and spread the mixture evenly onto the tray using a spatula.
  • Leave this in the fridge to set for at least an hour.
  • In the meantime: melt the vegan chocolate, take out your granola bar tray and drizzle generously with your melted chocolate.
  • Add all the remaining toppings! Let set in the fridge for another 30 minutes!
