Are you up for a super quick ice cream fix? These White Vegan Coconut Ice Cream Bites with raspberry filling only use 5 ingredients and require seriously minimal effort. Do you have some silicone chocolate moulds lying around? Great! This way you can make yourself some really pretty ice cream pralines! It will literally take you 5 minutes to prepare these, you just need a bit of patience for the freezing time

White Coconut Ice Cream Bites (makes 15 Pralines)
- 60g creamed coconut/coconut butter (slightly melted – I used Betty Butter)
- 1/2 cup maple syrup
- 100ml coconut milk
- 3 tbsp cashew butter
- 1/4 vanilla paste
- pinch of salt (optional)
- handful fresh or dried raspberries
Whisk together the creamed coconut, maple syrup, coconut milk, cashew butter, vanilla and salt. Depending on how you want your pralines to look either fold all raspberries into the mix or drop a couple of raspberries into your mould and pour the ice cream mix around it. You could also blend the raspberries separately and pour in the raspberry mix first followed by the ice cream mix.

Creamed coconut is also called coconut butter – the solid butter includes the fibrous shreds of the coconut meat and melts once heated. Please let me know if you need more infos! Lots of love, Nic
