If you didn’t know already I went to a wonderful blogger and foodstyling gathering last week organised by nu3. Meeting so many talented people sharing the same passion for good food was so inspriring in itlself. I was in foodstyling heaven, people! Plus, we got to meet foodstylist Denise from foodlovin who gave us insights into lighting, styling and the arrangement of food. I want to step up my photography game so I soaked up every little bit of information. So taking all that inspiartion in I started working on recipe for Raw Donuts with Colored Frostings.
I felt all super energized so I got into the kitchen to create these beauties at the weekend. I wanted to try Donuts for a while now but I had the idea in my head that I wanted a super colourful icing – as healthy as possible.
Raw Donuts with Colored Frostings (makes 12 mid size Donuts)
- date puree (made of 20 soft dates and 3/4 cup water)
- 2 tsp ground vanilla
- 1 cup oatmeal
- 2 cups hazelnut meal
- 2 cups almond meal
- 1 cup coconut sugar
- 1 cup coconut flour
Mix the oatmeal, hazelnut meal, almond meal, coconut flour and coconut sugar with the ground vanilla. Make your own date puree by processing 20 dates with 3/4 cup of water. Add it to the dry ingredients. The mix should be workable but rather dry. Transfer the dough to the fridge to rest for 2 hours. Remove the dough from the fridge. I did not have a donut mould so I rolled out the dough on a silicon mat using a cup to cut out the donuts and using a mini round cookie cutter to cut out the whole. If you are lucky enough to own a donut pan press the dough into your donut pan and transfer to the freezer – this way you can pop the donuts easily out of the pan after an hours freezing time.
Icings
Green Coconut Matcha (Icing for 3-4 donuts)
- 1/2 tsp matcha
- 2 tbsp coconut cream
- 1 tsp agave syrup
Whisk the matcha powder into the coconut cream and add the agave syrup. Mix until you get a nice green smooth texture – pour over the donuts. Decoarte with sliced kiwi fruit and cocoa nibs.
Red Raspberry (Icing for 3-4 donuts)
- 2 tsp raspberry powder
- 3 tbsp coconut cream
- 1 tsp agave syrup
Mix the raspberry powder with the coconut cream and the agave syrup. Spread it on the donut with a palette knife. Sprinkle with some cocoa nibs and fruits.
Yellow Vanilla Turmeric (Icing for 3-4 donuts)
- 1/2 tsp Turmeric
- 3 tbsp coconut cream
- 1 tsp ground vanilla
- 1 tsp agave syrup
Mix the turmeric with the vanilla. Whisk both into the cocnut cream and add the agave syrup until you get a smooth texture.
Dark Chocolate Sea Salt (Icing for 3-4 donuts)
- 2 tsp cocoa powder
- 3 tsp coconut cream
- 1 tsp agave syrup
Whisk the cocoa powder into the coconut cream and add the agave syrup until you get a smooth texture. Sprinkle some sea salt and cocoa nibs for decoration.
