As you can tell, I am on a raspberry mission. Since I got this raspberry powder made from dryfreezed raspberries I am all over it. The flavor is simply amazing and it astonishes me how versatile this is. I love these No-Bake Vegan Raspberry Bars to take to the office – they make a wonderful morning or afternoon treat with your cup of tea. These bars are glutenfree, refined sugrafree and on top of that a real flavor explosion.

The base for these No-Bake Vegan Raspberry Bars are ground oats and ground amaranth. Which means, having these for breakfast is totally fine. Have you used amaranth before? It has a lovely roasted flavor and I love adding it to my porridge bowl in the mornings.
I have made these also entirely sugarfree by using only dates as a sweetener. If you use date puree (dates blended with a little water) just be aware that the color of the bars will turn out slightly more brown than vibrantly pink.

No-Bake Vegan Raspberry Bars
Ingredients
Raspberry Bar
- 1 cup oatmeal
- 1 cup amaranth meal
- 4 tsp raspberry power
- 4 tbsp agave syrup
- 1 tsp vanilla essence
- 3 tbsp coconut milk
Raspberry chocolate coating
- 120 g cocoa butter melted
- 2 tsp raspberry powder
- 2 tbsp maple syrup
Instructions
Raspberry Bar
- Mix the dry ingredients in a clean bowl: oatmeal, amaranth meal and raspberry powder.
- Do the same for the liquid ingredients.
- Mix everything together and use your hands to create a firm dough.
- Transfer the dough to the fridge for half an hour to rest. Take it out and form bars of desired size. Pop them into the freezer for at least 2 hours.
Raspberry chocolate coating
- Prepare the chocolate coating by melting the cocoa butter in a double boiler.
- Add the raspberry powder and agave syrup and stir well.
- Dip bars into chocolate several times. The bars will be quite cold coming straight out of the freezer so you can create quite a thick coating by dipping the bars a couple of times.
- Decorate with cocoa nibs, coconut slices or nuts.
