These No-Bake Cookie Dough Moons might be the last recipe for this year! As we are riding along the Spanish Costa Brava, I am starting to settle into the camper van life. All my baking and smoothie bowl supplies have found their right place, the mini blender is working just fine with the solar panel. And with all of that in place, I am starting to try some new recipes – all created in my tiny camper van kitchen.
In general, I should probably be working on Christmas recipes. But with a sweeping ocean view from our van, my mind is everywhere but not with Christmas related foods. Talking about moon themed food, I got my hands on a moon shaped silicone mold which I have been waiting to put to good use. Before you ask, I bought these on amazon. We do not have a lot of space in the van. So I didn’t take a lot of my baking supplies with me but those moon molds…I mean! They are so pretty, I knew at one point I wanted to get creative with them. Since we do not have an oven in the camper van (we have ‘the Omnia‘ that allows me to bake on a gas flame), I was happy to create a no-bake treat. But with a crunch of chocolate. You know me.
You whip these Vegan No-Bake Cookie Dough Moons up with only 6 ingredients, and that includes salt. It’s a one bowl dish. Mix all ingredients with your hands, press the dough into the silicone molds. Let everything rest in the fridge for a bit and you are ready to go. On the other hand, there is no real need for a fancy silicone mold. You can roll up beautiful cookie dough truffles or simply cut them in pretty squares, all up to you!
Vegan No-Bake Cookie Dough Moons
Ingredients
- 1 cup almond flour (ground almonds)
- 6 tsp birch sugar
- 1 tsp vanilla
- 1/4 tsp salt
- 4 tsp melted coconut oil
- 1/4 cup chopped dark chocolate (dairyfree)
Instructions
- In a bowl, mix the almond flour, birch sugar, vanilla, and salt.
- Melt the coconut oil and work it into the cookie dough. You should get a sticky but workable dough here.
- Chop the chocolate and mix the chocolate chunks into the dough.
- Press the dough into your favorite silicone mold and let it chill ion the fridge for 10 minutes.
