I got my first Vitamix 5 years ago. It was an old second-hand model and I purchased it on Ebay for 400€. I still remember because it was expensive for me at that time but I really wanted to invest in a good blender that lasts for a long time. Me and my Vitamix, we became really good friends in the kitchen. He saved me a ton of money on nut butters, hummus, spreads and made me happy with hundreds of smoothie bowls and nutmilks. You could say, the Vitamix was the blender of my dreams. I thought, our friendship would last forever. I am slightly ashamed to admit but it broke my heart a little when I had to throw away the broken jug. Realizing how old my blender model was, I knew, I needed a new one. A new love.
Making Ice Cream with the Vitamix
So here we are today, my Vitamix ASCENT A3500i just arrived. I am happy. Really happy. Timing couldn’t be any better, temperatures are high and I had some real good ice cream recipes up my sleeve that needed trying. You would never think that a blender makes soft and silky ice cream but this one does. I never owned an ice cream machine but I feel it’s very unnecessary with my new darling in the house.
New Ice Cream flavors you have to try
I have two delicious ice cream flavors for you: a tropical mango one and a classic vegan Stracciatella flavor (which is like the Italian chocolate chip ice cream version). Wanna find out how making Ice Cream with the Vitamix works?
Mango Passionfruit Pops
If you are a fan of light tropical flavors, this is your jam! The recipe couldn’t be any easier because the blender does all the work for you. All you have to do is freeze the ice cream into popsicles later. For the Mango Passionfruit Pops, I have used dried organic mango and pineapple, which is then blended with cashews, vanilla, maple syrup and coconut milk. Cut 2 passionfruit open and scoop them partly into the ice cream molds. Pour the mango pineapple mousse on top and freeze overnight, that easy!
Mango Passionfruit Pops
Ingredients
- 1/2 cup cashews
- 1/2 cup coconut milk
- 1 1/4 cup oat milk
- 2 tbsp agave syrup
- 50 g dried mango
- 30 g dried pineapple
- 1 pinch salt
- 1 tbsp vanilla paste
- 2 passionfruits pulp only
Instructions
- Add all ingredienst to your blender except the passionfruit.
- Blend for one minute or until creamy.
- Cut the 2 passionsfruits and scoop half of the pulp into the silicone ice cream molds.
- Pour in the mango ice ceam from the blender, but leave a bit of room to scoop in the remaining passionfruit pulp. Add the ice cream sticks.
- Transfer the ice cream molds to the freezer for 12 hours. Remove from the silicone molds and enjoy!
Vegan Stracciatella Popsicles
The recipe for these is equally easy but it requires a bit more time cause you want to chocolate coat them after they are frozen. It’s totally optional but worth it. You start by blending the cashews, coconut milk and maple syrup and vanilla until very creamy. Before pouring the ice cream liquid into the molds, you stir in (not blend!) some grated dark chocolate. Now its time to pour. Freeze, ready. If you are feeling a little extra, dip the top of the Stracciatella Popsicles into some melted chocolate and sprinkle with popped quinoa.
Vegan Stracciatella Popsicles
Ingredients
- 1/2 cup cashews
- 1/2 cup coconut milk
- 1/3 cup oat milk
- 1 tbsp vanilla paste
- 3 tbsp agave syrup
- 1 pinch salt
- 50 g dark chocolate
Instructions
- Add all ingredients to your high speed blender except the dark chocolate.
- Blend for one minute or until very creamy.
- Chop the dark chocolate roughly and stir into your blender container. Do not blend, you want the chunky chocolate pieces in your Stracciatella Popsicles.
- Pour the ice cream chocolate mix into your silicone molds and freeze for 12 hours.
- Release from the molds and enjoy!
