Look at these glorious Deluxe Chocolate Granola Bars! Sorry for the deluxe add-on, or actually no, I am not sorry because it is totally deserved. And I while I am popping the last bit into my mouth, I am thinking, yes…they are totally my kind of deluxe. And, the first time I am giving a glutenfree granola bar a try.
I love that these Granola Bars are gluten-free but still fill you up. I think the reason why I never attempted to make a glutenfree bar was because I was worried, it wouldn’t fill me up. But the opposite is actually true. And yes, they are kind of light from a weight point of view which is due to the quinoa pops or rice pops. But trust me, they would still leave me full and very satisfied.
I understand that these Chocolate Granola Bars wouldn’t be your every day morning granola bar. They are probably more on the treats side of things, right? But in saying that, the basic is perfect base for a breakfast granola bar. I am using healthy grains like popped quinoa and rice pops, seeds, dried fruits and healthy fats in form of nut butters. If you want, you can go fully sugarfree on the granola bars. Simply double the amount of dates and leave out the maple syrup.
The extensive toppings are what makes these Chocolate Granola Bars a truly deluxe food experience. And again, you use what you fancy! To me the mixture of cacao nibs, almond butter, and chopped roasted hazelnuts is my version of a deluxe. experience. And whatever yours is, go with it.
Deluxe Chocolate Granola Bars
Ingredients
Deluxe Chocolate Granola Bars
- 125 g popped quinoa/rice pops or mixed
- 15 chopped dates
- 1 cup ground linseed
- 1 cup mulberries
- 2 cups cashews
- 1/2 tsp salt
- 1 tsp ground vanilla
- 3/4 cup maple syrup
- 2 cups peanut butter
- 1/2 cup cacao butter
Toppings
- 200 g vegan chocolate melted
- 1 handful cacao nibs
- 3 tbsp dried flowers
- 1/2 cup chopped roasted hazelnuts
- 4 tbsp almond butter
Instructions
- In a bowl mix the dry ingredients: popped quinoa/rice, chopped dates, linseed, mulberries, cashews, salt and vanilla.
- In a saucepan melt the peanut butter, cacao butter and maple on a slow heat.
- Add the mixture to the bowl of dry ingredients and mix well.
- Line a tray wioth parchment paper and spread the mixture evenly onto the tray using a spatula.
- Leave this in the fridge to set for at least an hour.
- In the meantime: melt the vegan chocolate, take out your granola bar tray and drizzle generously with your melted chocolate.
- Add all the remaining toppings! Let set in the fridge for another 30 minutes!
These Chocolate Granola bars keep super fresh in the fridge for up to 2 weeks in an airtight container.
