I am super obsessed with my new Tonka Bean Oil lately so it was just natural to include it into my next wholesome Christmas Cookie! These Banana Tonka Cookie Sandwiches are kind of a banana bread turned christmas cookie! So if you call yourself a banana bread lover, you cannot go wrong with these wholesome Banana Tonka Sandwiches here. Even though they look quite fancy, I kept them very easy in terms of baking time and ingredients which means more precious time with your family and friends to enjoy them.

Banana Tonka Cookie Sandwiches (makes approx. 20 sandwiches)
- 2 ripe bananas
- 100g almond butter
- 3 tbsp lemon juice
- 10 drops Tonka Bean oil (I use the Tonka Bean Oil by Taoasis)
- 1/4 tsp vanilla bean powder
- dash of salt
- 2/3 cup walnut flour
- 1/3 cup coconut sugar
- 150g spelt flour
- filling: 1 cup peanut butter
- coating: 100g vegan chocolate
Add all ingredients into your high speed blender/food processor and mix well until all ingredients are well combined. Remove the dough and add it into a piping bag with a round nozzle. Start piping the biscuits onto a lined baking tray. Bake the cookies at 200°C for approximately 10-12 minutes. Since all ovens are different make sure you check your cookies every 5 minutes to make sure they don’t burn. They should only be slightly browned. Let cool for at least 30 minutes. Use half a teaspoon of peanut butter to stick 2 cookies halves together. Repeat for all cookies. Melt your chocolate in a double boiler or microwave and only dip one half of the sandwich into the chocolate. Let rest until the chocolate hardens and enjoy! I kept mine in the fridge in an airtight container. They will keep fresh for a week!
