Raw Vegan Coconut Ice Cream Bites

White Coconut Ice Cream Bites (makes 15 Pralines)

  • 60g creamed coconut/coconut butter (slightly melted – I used Betty Butter)
  • 1/2 cup maple syrup
  • 100ml coconut milk
  • 3 tbsp cashew butter
  • 1/4 vanilla paste
  • pinch of salt (optional)
  • handful fresh or dried raspberries

Whisk together the creamed coconut, maple syrup, coconut milk, cashew butter, vanilla and salt.Β  Depending on how you want your pralines to look either fold all raspberries intoΒ  the mix or drop a couple of raspberries into your mould and pour the ice cream mix around it. You could also blend the raspberries separately and pour in the raspberry mix first followed by the ice cream mix.

    1. Hi Monika, thanks so much my love! Hope you like these little healthy beauties! Give me a shout if you give them a try!

  1. These look so pretty! Perfect for a party! My question is, did you use coconut cream or coconut butter? Aren’t they two different things?

    1. Hi Sue, thanks so much for stopping by at When Sweet Becomes Healthy! Sorry for the confusion: I used creamed coconut (not coconut cream!). Creamed coconut is also called coconut butter – the solid butter includes the fibrous shreds of the coconut meat and melts once heated. Please let me know if you need more infos! Lots of love, Nic
