White Chocolate Bundt Bites (vegan)

Bundt Bites:

  • 100 cocoa butter melted
  • 50g amaranth
  • 1 tbsp vanilla essence
  • 8 Dates soaked in water and blended
  • 100 grams cashews – ground
  • 5 tbsp soy milk or any other plant milk
  • half a cup maple syrup (or less if you prefer)
  • 100grams desiccated coconut – toasted
  • 30grams cocoa nibs (optional)

For the bundt bites toast the descicated coconut carefully as it can burn quickly. Mix the coconut with all dry ingredients. Melt the cocoa butter and add in all wet ingredients such as the vanilla essence, soy milk and maple syrup and the blended Dates. This should leave you with a nice sticky dough. Now take your cute Bundt mould or any other small dish. I used a Silicone Bundt chocolate mould which doesn’t require any greasing. Once you have stuffed the dough firmly into the moulds put it in the fridge for a couple of hours. Once the Little Bundts are firm enough simply pop them out of the mould and serve! You don’t have to store them in the fridge, they will keep as firm as they are unlike other vegan chocolates.  You could also use those little munchies for cake decoration or cupcakes!
