Walnut Apricot Slabs (vegan)

Base:

  • 100 grams all-purpose flour
  • 100 grams oats
  • 30 grams rice flour
  • 1/2 tsp baking powder
  • 50 grams rice syrup
  • 10 dates soaked in water and blended
  • 100 grams coconut oil
  • 1/2 cup of water

Topping:

  • 1-2 cups of apricot jam (alternatively blend 2 cups of dried apricots which are soaked in water to make a jam)
  • 3 cups of walnuts
  • 80 grams rice syrup
  • 3 tbsp coconut oil
  • 2 tbsp vanilla powder
  • dark vegan chocolate

For the base mix the flours, oats and baking powder. Mix the blended dates and rice syrup, the blended dates with the coconut oil and add to the flour mixture. Add as much water as needed. The dough should be quite solid so you can still roll it out. After you rolled out your dough smear your apricot jam on top. Add as much as you like! I love marmalade soย I went all out with homemade apricot jam! For the topping mix all the ingredients, pour it on the base and spread evenly. Bake for 30-40 minutes at 180 degreesย but check in between, it really depends on how thick you rolled out the dough. Let the cake cool and melt the chocolate and drizzle over the cake. Cut into slabs or any shape you love!
