As you can tell, I am on a raspberry mission. Since I got this raspberry powder made from dryfreezed raspberries I am all over it. The flavor is simply amazing and it astonishes me how versatile this is. I love these bars to take to the office – they make a wonderful morning or afternoon treat with your cup of tea.
Bars (this makes small 5-6 bars, just double the recipe if you would like more)
- 1 cup oatmeal
- 1 cup amaranth meal
- 4 heaped tsp raspberry power
- 4 tbsp agave syrup ( I have a raspberry version)
- 1 tsp vanilla essence
- 3 tbsp coconut milk
Mix the dry ingredients in a clean bowl: oatmeal, amaranth meal and raspberry powder. Do the same for the liquid ingredients. Mix everything together and use your hands to create a firm dough. Transfer the dough to the fridge for half an hour to rest. Take it out and form bars of desired size. Pop them into the freezer for at least 2 hours.
Raspberry chocolate coating
- 120g cocoa butter
- 2 tsp raspberry powder
- 2 tbsp agave syrup (raspberry version)
Prepare the chocolate coating by melting the cocoa butter in a double boiler. Add the raspberry powder and agave syrup and stir well. Dip bars into chocolate several times. The bars will be quite cold coming staright out of the freezer so you can create quite a thick coating by dipping the bars a couple of times. Decorate with cocoa nibs, coconut slices or nuts.
