- 1 can full fat coconut milk (chilled)
- 250 ml coconut water
- half a cup of maple syrup or a sweetener of your choice
- 4-5 tbsp tapioca starch/ cornstarch
- vanilla essence (optional)
Pour the chilled coconut milk into a bowl and beat for a minute until a slight foam forms. Add in the coconut water, sweetener and vanilla essence and beat for another 2 minutes. Then slowly sift in the thickener. Be careful – the mixture can thicken pretty fast. Keep adding the thickenber until it reaches the desired consistency. By putting the mixture into the fridge it will become even more firm. Top your coconut yoghurt with some fruit, voila!
