DIY Cocoa Pops

Hi there friends! This is the first time I am sharing a breakfast recipe with you on WSBH. This is a super easy and fun way to enjoy your raw fruit and nut bar as a cereal for breakfast. It might even be a smart way to sell raw cereals to your kids (or to yourself)!

I used to love cocoa pops as a child. Not knowing what was in there my mum served this for breakfast quite frequently. That moment when the milk turns into chocolate milk is just magical, isn’t it? But surely cocoa pops are far from nutritional, full of sugar and highly processed. But the good news is you can simply make your own cocoa pops by using a raw fruit/nut bar combined with a super healthy grain which is amaranth. I love the nutty flavor of amaranth when it’s popped which makes it perfect for my remake of cocoa pops (if you are a big fan of amaranth too it might be worth looking into my Pink Rasperry Bars).

So when I got myself a big bag of Goody bites (there are round coin shaped raw fruit and nut cookies) I immediately had the idea to cover them with chocolate and roll them in amaranth for the cocoa pops effect. Feel free to use your favorite fruit/nut bar, chop it into pieces, coat in chocolate and roll in popped amaranth. Enjoy with fresh almond milk and you will be in heaven! As you can see I have added some organic gluten-free cookies as well (as a special treat) to turn the milk into chocolate milk. But you could happily add some cocoa powder or carob powderΒ  to get that chocolatey effect. You guys ready for breakfast now? Yes? DIY Cocoa Pops

  • 1/4 cups cocoa butter (melted)
  • pinch of salt & vanilla
  • 1 tsp carob powder (or cocoa powder)
  • 1 tsp rice syrup
  • 1 cup of amaranth (popped)
  • 1 good handful of your fav raw fruit/nut bar chopped into pieces (I used Goody Bites by Biostyle)

Cut the raw bar into bite size pieces. Whisk together the melted cocoa butter, salt, cocoa powder and rice syrup. Dip the fruit bar pieces into the chocolate, roll in amaranth and let them harden (at least for a hour) on a lined tray. Add the cocoa pops into a bowl and enjoy with almond milk and fruit.
