Some weeks ago I got in contact with the amazing people from Just Blends in Australia. They make something which I found very unique and couldn’t find anywhere else. You have probably heard of dragon fruits before, and maybe you were to taste them where they grow – which is in Thailand! In Europe they are pretty tasteless and there is no chance you can get your hands on a pink dragon fruit (there is a white and a pink version).
This is where Just Blends comes into play. I mean Australia is really innovative when it comes to raw vegan products. Check out Pana Chocolate and you know what I am talking about. So what Just Blends does is they produce a powder made from purple dragon fruits and let me tell you – it is pure magic! Peopel call matcha the cocaine for vegans – honestly speaking the Just Blends dragon fruit powder is mine! So the minute my Australian cocaine parcel arrived I started experimenting. These raw coconut marble balls make a colorful start (forgive the sprinkle explosion, not healthy but pretty). These truffles require just 4 main ingredients, they are wholesome, raw, vegan, soyfree, Paleo and free from refined sugars.
- ½ cup creamed coconut (soft)
- ½ cup coconut milk
- 3 tbsp. maple syrup
- ground vanilla
- 1 tsp mango powder by nu3 + 1/2 tsp turmeric powder (for yellow color)
- 1 tsp dragon fruit powder by Just Blends (for pink color)
- 1 tsp matcha by nu3 (for green color)
Combine the first 4 ingredients, knead the dough with your hands if neccessary. Transfer to the fridge for 10 minutes. Now divide the dough in 3 equal bowls and add the fruit powders to each part. Now grab a bit of dough from any 2 color variations or even all 3 if you like and roll them into a ball between your hand palms. By rolling them you will see how the colors mix and create a marble effect. Play with the colors and go crazy with shapes. You could even use a cookie cutter or a silicone moulds for variations of shapes! Go wild!
