I made chocolate! Really, I did! I am so excited about today’s recipe. I cannot believe how easy this was and it took no time at all. Why the heck is everyone buying chocolate these days? No shopping needed – I had all the ingredients at home. It tastes quite different to ‘commercial’ chocolate. The texture is very creamy and smooth with a hint of coconut but not too much. You can play with the flavors and ingredients and make this your favorite treat. Use nuts, nut butters, superfoods or spices. The chocolate bursts with goodness of the coconut, healthy fats and nutrients from the added superfoods. I chose to create a Matcha, Acai and Roasted Hazelnut version. This recipe makes 500-600 grams of chocolate.
What you need for the basic Chocolate:
- 400g of creamed coconut (buy this at the Asian store or order online)
- 50g of coconut oil
- Ground vanilla
- 4 tblsp of coconut sugar or 5 tblsp of agave syrup (you can also Play with different flavored syrups f.eg by agava)
- 1 tblsp Acai Powder + 2 tblsp of Chia seeds
- 1 tsp organic Matcha Powder
- 1 tsp raw cocoa powder + handful of hazelnuts (roasted or raw)
- 3 tblsp shredded coconut
Melt the creamed coconut in your double boiler with the coconut oil. This can take a while since creamed coconut is quite solid. Mine was as firm as a soap bar. Just cut it up a bit to speed up the process. Add the coconut sugar. The coconut sugar does not melt easily so make sure you stir properly so the sugar is evenly distributed when dividing the chocolate in different parts. Pour the melted chocolate into your mould. I didn’t bother buying moulds, I used my madeleine baking tray. In case the chocolates don’t come out of the mould easily, pop them in the freezer for 30 min and you will see how easily they come out. I am so in love with my chocolates!
